Perhaps nothing is more stunning on a holiday table that an eye-popping dessert. I have found the perfect show-stopping dessert for your special celebration this season. Catherine Rodriguez, the talented pastry chef at the Houstonian Hotel, never ceases to amaze.
Her beautiful Orange Cointreau Tea Cake still holds a special place in my recipe section, but I must admit, her newest creation steals the show.
Chestnuts are a great nut to nibble on during the holiday season. You see them a lot more on the East Coast, here not so much. They’re also a little tricky to describe, but here goes…nutty, smooth, creamy and…good.
Catherine’s cake is very easy to do, and includes your mainstay ingredients — minus any flour. It’s big flavor comes from chestnut spread which you can find at Amazon.com if it’s not available at Central Market. These gorgeous cakes will be on the menu at the Houstonian for the remainder of December. Perhaps longer if we’re really lucky! In the end, our cake is fittingly crowned with a dried candied chestnut.
